Aulis Cartmel

Adjacent to L’Enclume, Aulis Cartmel provides a ‘behind the scenes’ dining experience at our three Michelin-starred restaurant.

Limited to only six guests for lunch or dinner, guests can enjoy L’Enclume dishes whilst learning about our chef’s creative processes and how we work with ingredients from Our Farm, whilst watching our chefs at work.

Farm-to-fork has always been at the heart of what we do and that continues to this day.

Every dish on the menu begins life at Our Farm where we learn from our Head Grower what is at its peak. Or an ingredient from the wild or one of our fantastic local producers. Those ingredients are then discussed with the senior team and developed in Aulis, our development kitchen. The chosen dishes then make their way onto the menu at L’Enclume.

At L'Enclume, we cater for most health or allergy-related dietary requirements with advance notice but, unfortunately, we cannot cater for dietary requirements on the day. Please specify any dietary requests when making the reservation so advance notice can be given to the kitchen.
